Ingredients
- 1 cup flour
- 1 teaspoon baking powder
- 1½ teaspoons cinnamon
- ¼ teaspoon ginger
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- ¾ cup canned pumpkin
- ½ cup sugar
- 1 egg
- ¼ cup melted butter
- ½ teaspoon vanilla
Steps
- Get ready: Preheat oven to 375° F. Grease a 6-count muffin pan or line with baking cups.
- Mix the dry ingredients: In a large mixing bowl, combine the flour, baking powder, spices, and salt.
- Mix the wet ingredients: In another bowl, mix the pumpkin, sugar, egg, butter, and vanilla until well combined. Pour this into the flour mixture and blend well.
- Fill the cups. Spoon the batter evenly into the muffin cups until they’re nearly full.
- Bake the muffins: Bake for 20 minutes or until a toothpick inserted in the center comes out clean. (Ask an adult for help.)
What You Need for the Decorations

- candy eyes, chocolate chips, or raisins

How to Decorate
- Cut two triangle-shaped ears and two bat wings out of black paper for each muffin.
- Once the muffins are cool, make slits with a table knife and gently stick in the cut-out ears and wings, as shown.
- For eyes, press two candies, chocolate chips, or raisins into each muffin.
